Some sights seen in Oregon: Part I of III



 

Last week, Julia, Max and I went to Oregon, spending a few days in Eugene and a few days in Portland, where we drove around a lot, saw a lot, and ate a lot.

This post is intended to show you many of the sights that were seen, including...

Nom Phnoming at Phnom Pehn and a Surprise!



On Saturday, Julia and I took Max to Phnom Pehn in North Olmsted for a nice meal.

As Max lay back and relaxed...


...I got to enjoy a stuffed chicken wing...


...and Mee Khmer (Rice noodles with chicken and shrimp sauteed in sauce of tofu, crushed chilies, garlic, shallots, Chinese chives and bean sprouts, topped with shredded omelet, served with a lime wedge).

Very delicious!

As it turned out, Cambodian New Year began the following day on April 14, so we picked a good time to be there!

This weekend, the Cambodian calendar wasn't the only thing that changed...


...my face did as well.

Clean shaven to show off a skinnier me.

Da-tah!

A dieting obstacle of an interesting kind



 

Life is sometimes like an Oberlin shop window that presents you with one strange thing after another.

As our home continued to battle sickness that began a few weeks ago, things were just starting to look better.

Max's congestion went down and his cough was fairly minimal.  Julia's sore throat was still present, but it seemed to be a little more bearable.  And my sinus infection had gone away, thanks to a generic form of Bactrim that I was taking.

The diet was still going well, getting my weight down to 165 (23 pounds, baby) and I was giving in to a little decadence...


 ...with pan-fried pork chops, brussel sprouts with balsamic glaze and dried cranberries, and some kale with cranberry beans.


I even had a fantastic lamb shank and leek bread pudding dish at the Black River Cafe in Oberlin.

But this past Monday, during my second to last day of the antibiotic, I woke up cold and tired with a headache, swollen eyes and swollen neck glands.  Around 10 am, I noticed a rash on my lower neck and shoulders.

I tried to schedule a doctor's appointment, but the best I could get was the next morning, so I waited it out a bit, starting to believe that maybe it wasn't an allergy since it didn't itch...


 ...and then the rash spread by 5 o'clock that evening.

With a slight shortness of breath and growing rash, Julia, Max and I went to the Drug Mart pharmacy and the pharmacist agreed that it was an allergy, to NOT continue my antibiotic and to go to the hospital if it got worse or my breathing got restricted.  He told me to take some Benadryl, which I did, and I hung out to the next morn.

The doctor's appointment involved a throat culture (she said it looked bad back there), chest X-rays (lung) and general exam.

I was given a Z-pack for the antibiotic and prednisone (steroid) for the rash and he told me to continue taking the Benadryl.

Hopefully, this takes care of things.

Unfortunately, I keep hearing nasty things about Prednisone, especially in terms of weight gain.  Will a 10 day's supply of the medicine sabotage 3 months' worth of careful eating?  

Or will I make it through unscathed...

...with with better looking skin?

"Eat-ster" at Mom's




With Julia and Max unfortunately still sick from recent colds, I headed up to my mom's for 2 hours for a quick Easter celebration (and to bring back some grub).

Special thanks to my wife for watching Max so I could go up!

For Easter, everyone was supposed to bring something and I was assigned the deviled eggs.

I decided to make two batches...

1.) A normal batch with mayo, mustard and sweet pickle relish


2.) And a gour-met type with mayo, mustard, fresh rosemary, lox and caviar.

Both were rather tasty!

But I am fortunate to be part of a gene pool all rather talented in the culinary arts, which is why I got to enjoy other things like...


 ...a most-delicious beer bread (Jen)...


 ...great potato salad (Aunt Rosemary)...


 ...awesome ham (Mom)...


 ...and a marshmallow and Jello concoction (Aunt Rosemary).


 Add some vegetable casserole (Mom) with it and you have a feast.


We burned off some of the extra calories with some kite-flying...


...only to pack them back on via brownies...


...and excellent white chocolate cheesecake with raspberry topping (Mark).

By the end of it...


...I thought the cat had the right idea.

Max's First Eats: the Beginning of a Foodie



Even though Max has been a rather happy child, small signs began to indicate that he was ready for something more than just breast milk.

So, one evening...


...Dad grabbed a chunk of banana...


...mashed it up...


...and added a bit-o-breast milk...


...for the perfect creamy baby meal.


(I think Mom was nervous.)

We sat him down, buckled him in and put a nice bib on him.

And this, my friends, is how he took to it...


...success!


He was easy to feed, being that he enjoyed the bananas...


...and he seemed to want more after he cleaned his bowl.

A few days later, we tried giving him avocado...
 .

...but he wasn't so thrilled (even with his mother's hopeful cheering).

But once we added some banana back in...


...his eating ease came raging back.

Soon, we will introduce him to many more wonderful foods...


...while reserving a few favorites for the more mature years.
